    Generally speaking, the wider the kayak and the flatter the bottom, the more stability you will have. Keep in mind stability usually is a trade off for speed and tracking.

    There are several sit on top models which are specificly designed for kayak fishing. Here’s a few from Ocean Kayak

    There are other brands of sit on tops that make similar models too, check out a store like Sportsman’s Warehouse or Cabela’s if you have them.

    I’m a big guy @ 280lbs 6′. I tested out the feelfree moken 10 that is almost 36in wide with 400lbs limit. It was good, stable, and small to store in the garage. I order it, but cancel order after waiting 4 weeks without news of shipping. I got a Wilderness System Ride 115. @ 11’6in it can take 500lbs. It is almost 33in wide and built for anglers that like to stand on it. I have not yet done that, but in the summer time I will try standing.
