It costs a lot but I think that the Coosa sit on top by Jackson Kayak is by far the best fishing kayak, but you might not want to spend that much though. You can even stand up in the thing. It has some great features just for fishing.

I agree the Jackson Coosa is the hottest new fishing kayak on the market. I has gotten great reviews. Myself and a few of my friends have all paddled it (we all vary in size from 120lbs to 200lbs) and it paddled like a dream. The best part was is that it was super stable, even when we were standing. The seat is super comfy, and is height adjustable.
